Eggplant Pizza

Going low carb can often mean you miss out on the treats you love. If you are a low carber but a serious pizza fan, this recipe might be just what you are looking for (Recipe courtesy of


2 large eggplant

75 ml Extra virgin olive oil, for brushing and frying

2 cloves garlic

1 medium onion

325g minced beef

175ml Passata

275g Cheese (pizza blend)

2 tablespoons oregano, (fresh or dried)

Fresh basil for topping

Makes 4 Serves (558g per serve)


1. Preheat oven to 200 degrees C

2. Slice eggplants lengthways, about 1cm thick. Brush with olive oil on both sides and place on a baking sheet lined with baking paper. Bake for around 20 minutes or until slightly browned

3.Add remaining olive to a frypan and fry the onion until softened (around 3 minutes on a medium heat) then add the mined garlic until aromatic, (around 30 secs)

4.Add the mince to the pan and saute until nice and brown. Add the passata and season with salt and pepper. Simmer for about ten minutes

5. Remove the eggplant slices from the oven and spread the meat mixture on top. Sprinkle with cheese and oregano and bake for 10 minutes or until the cheese has melted

6. Serve with green salad with a drizzle of olive oil.
